You could add version specific atoms for the packages you need to
/etc/portage/package.keywords:

          =games-puzzle/gnudoku-0.92 ~x86
instead of
          games-puzzle/gnudoku

The effect should be (AFAIK), that the package wont upgrade to the
newest unstable version, but stay at version 0.92 in this example. So
you dont need new unstable dependencies once the package is installed.
(For it wont upgrade unless there is a higher stable version of it
available)
