If you need help with this, I've heard a lot of developers exclaim that
they would gladly pitch in for the NFP filing. Maybe a paypal donation
marathon specifically for the creation of the NFP. After the NFP is
created, money is something that is going to need to be handled very
openly and kept very much accountable. A public record of moneys coming
in (through the store, donations, etc) and going out (hardware, PR
events, etc) should be kept and updated on a daily basis. Good records
will also help come tax time. Maybe a treasurer position on the board
for this purpose?

Can you clarify the purpose of this a bit more? As I understand it
above, the Gentoo Store remains your personal business, seperate from
the Gentoo Foundation. I would think that the Gentoo Foundation would
need the store for future funding. I could be misunderstanding this, if
I am please say so.
