I have gcc-apple-4.0.1 and gcc-fsf-4.1.2 installed. After a decent
amount of testing I came to the conclusion that FSF gcc doesn't work out
on OSX, since it misaligns with the kernel, resulting in kernel traps
when running the produced code. An example is
subversion/neon/apr/whatever in that chain.

indeed, and trying to enable it makes the build fail. gfortran does
work with gcc-fsf-4.1.2. I recently noticed that gcj (which also works
with 4.1.2, but not with apple-4.0.1) is a separate package, so maybe we
can do the same for fortran, because it seems to be a package frequently
asked for.
