I am trying to build a live cd using xdm as the display manager instead
of gdm. I am running into a problem, because xdm does not automatically
log you in after 10 seconds like gdm. Instead, xdm asks for a username
and password. I have tried user: gentoo with no password, but that does
not work. Is there a username/password combo that I can use here, or do I
need to modify one of the scripts to create a user prior to starting xdm?

No.

Yep. Maybe in an fsscript, if you have one. Or you can create an
ebuild similar to ftpbase.
