Ran pretty much the same setup for the same reasons for 3+ years on
Gentoo and had no problems. I did eventually scrap the original virtual
mail system to do a major hardware and software upgrade. I could have
done the software in place, but decided that upgrading to a 2.6 kernel,
Mysql 4.1, Apache 2.0, and Postfix 2.2 all at once was probably better
done on a fresh box and would require less late nights during the
switchover.
With two servers in a corporate setting I'd skip any advanced package
stuff. Do the glsa checks and don't upgrade anything without testing on
your desktop/personal webserver. Also keep an eye on the forums for the
things you're running. When you've answered a few hundred questions
about Postfix and virtual mail you're much less likely to be caught off
guard by any package changes. :-)
