Take a spare desktop system, strip / rebuild / reconfigure it as a 
single purpose system.
Lots of card slots and memory are very good to have for this system.
It works, but can be a pain space and time wise. ( Firewall / DHCP 
Server / Router ).
I have done this twice for relatives.

Disclaimer : Gentoo was not used for these systems.
( Asking elderly non-technical relatives to learn Portage ... is a Bad 
Idea.  )
( And yes, I mean if you have to explain power button usage ...  )

Can run off a DVD-ROM, no drives installed.
Floppy or USB ( Removable Drives  store the config settings ).
